So what are grits? I always thought it stood for Girls Raised In The South.

That's GRITS.

Grits is coarsely ground corn cooked to a porridge-like consistency.
"quick" ain't grits, and grits don't come from the microwave. A guy in my Sons of Confederate Veteran's
camp makes the most awesome yellow grits I know of using 100 year old milling equipment. That's
the kind of grits I've been eating at home for the last ten years or so. I rue the day he quits making
them.
I put cheese in my grits sometimes, though some purists think that's a sin. Grits goes with bacon and
eggs, salmon oooked right sitting on a bed of grits is really good, shrimp and grits... grits makes good stuff
better.
