If you are trying to find someplace to ride on Saturday, you might want to head up toward Melissa (Hwy 5 just north of 121) to come tast some of the best BBQ ribs a small town can cook up. This is the 4th Annual Celebration of Freedom this year, and out of the first 3 years, I have taken 1st place two years!!! I am the defending champion and will be defending against my oldest son, Chase, this year. I bought another smoker two days ago and we will be cooking over 300 lbs of meat, from 30 racks of ribs, 16 pork shoulders and 8 briskets!! I will also be selling baked beans and my homemade BBQ Sauce. All proceeds from my sales go to support the Melissa Booster Clubs. Judging is at 4:00pm. Food will be for sale about 3:00 when everything gets kicked off. There is a parade at 6 and fireworks sometime after 9. Feel free to call me at 214-893-9171-cell.

pecan is also my smoker wood of choice...smells so sweet, somtime i just fire up the smoker for the smell...hope to get some q ing tips from you sometime,,today,,, she might be to hot for me,,post some pics of your two rigs if you get a chance,,hope you or your son get 1st place again,

I wish you all could have been there for the small town experience we enjoyed in Melissa today! Didn't hurt a bit that Charles took first place again this year, and for good reason!

If you get a chance to experience "low level" fireworks (new to me), jump at the chance. The low altitude show felt very up close and in our laps.

Had a great day yesterday.  Great friends, great food, swamp fan for cooling effect... what could have been better?  A good crowd for that kind of event in a small town.  Enough people to be interesting/friendly, but not so many as to be a mob.

Congratulations Charles on your first place ribs.  Meat was excellent.

Chase, I enjoyed your ribs too!  Don't be discouraged because you didn't get a trophy.  Keep trying and watching your dad, and you will be giving him some major competition in no time.  You can be one of the best if you don't give up.
