I have a hitch, i don't know what brand, and I'm wanting to go to the darkside.  Will a 205/60/16 fit

Adding a hitch won't affect tire fitment.  Many people have use 205/60R16 tires on Valkyries.  Most have cut off the nut cages on the inside of their fenders, and some have had to shim (with washers) between the rear fender rail and the bike frame to pull the fender out a little on the right side.  There is usually between 1/32" and 3/32" clearance between the tire and the drive shaft tube (swing arm).  That is enough clearance.
