Is there a head bearing grease fitting on a 99 Valkyrie interstate? I get a slight wobble left to right between 35 and 45 miles per hour.

Dont think so as far as grease fitting.
My IS acted the same way once and turned out is was a cupped rear tire. Check the rear tire, I know it sounds crazy to feel that in the handle bars but a new rear tire cured my problem.

no fitting.
there are checks in the manual to do. might just need to be re-tightened if the bearings are not notched.

Or even a steering stem bearing replacement. Not really hard just need the right tools.

I had the same wobble when I had a front tire that was out of round. It can happen to an old tire when one of the belts inside the tire starts to go bad. Raise it up and spin the tire holding a straight edge or a pencil lightly on the thread, if out of round you will be able to tell.

All good advice
If the bearings be the issue.....
Easy enough to change
Grease will get old and clump, the bearing will roll back and forth trying to find the sweet spot within the race.
If tires are good,  fear not the replacement of the bearings.
