If they fit on and you're comfortable it should be fine. Since you might be
the first person ever to want to do this  Smiley you'll have to make sure that
the cables and lines still reach and stuff like that... don't use those el-cheapo
$30 ebay risers on a Valkyrie, judging by numerous posts here, they are
prone to breakage...

Yes, the handlebar risers can easily be turned 180 degrees without problems.
Just loosen the riser mounts from underneath the triple clamp and spin them around.
When I bought my Valk, I did this until I replaced the stock bars with tracker style bars.
For me, reversing the risers caused the bars to be forward enough that the gauges were partially blocked from view, though.
