Tops knives has available a 2 different Dicer/Chef's knife in S35VN.

They are expensive and look great, I do not have any first hand experience with Tops or their knives, but they seem to be a reputable company.

Those are expensive?  I'd say those are on the very low end of expensive for a chef knife
