We had one of those just outside our door at the Sagebrush Inn in Taos. I had never before seen one so I guess they're not real common.  It's a tragopogon or salsify.  They say the root and stem are edible.  They're not native to North America but were introduced long ago by Europeans.  Mostly considered weeds.
