When you expose high-linoleic soybean oil to high temperatures, you generate oxidized lipids. These oxidized lipids increase inflammation in your bloodstream, increasing your risk of atherosclerosis (hardening of your arteries) and heart disease
  • .

High linoleic acid oils also throw your omega-6 to omega-3 ratio out of whack. A healthy ratio is at least 4:1, but many health experts argue that a 1:1 ratio or more in favor of omega-3s is ideal.

Unfortunately, most Americans consume super high levels of omega-6s — more like a 1:12 or 1:25 ratio in favor of omega-6s. And high omega-6 levels increase your risk of obesity, inflammation, and deteriorate brain health
  • [
  • .

Another way that linoleic acid is linked to obesity? By boosting arachidonic acid — another omega-6 fat that can contribute to obesity
  • .

Soybean oil may be toxic to critical immune cells
  • .

In one study, researchers gave participants either olive oil or soybean oil for two weeks, then measured lymphocyte and neutrophil levels.

Unlike olive oil, soybean oil was toxic to both types of immune cells — immune cells that you need to fight infections and keep you feeling strong.

Oils from soybeans, canola, peanut, and sunflower are all examples of high omega-6 fats that cause inflammation and cellular damage. Avoid these oils whenever you can.

Soybean Oil Scrambles Your Master Control Center and Changes 100+ Genes

Still curious, the same researchers conducted another study to compare the effects of three high-fat diets on mice: soybean oil, low linoleic soybean oil, and coconut oil.

They evaluated the brains of the mice and discovered that soybean oil cause profound effects on the hypothalamus – a small region of the brain that acts as a control center for regulating weight, body temperature, and metabolism.

They also discovered that soybean oil consumption changed the expression of over 100 genes involved in everything from inflammation and metabolism… to brain function and hormone production!i

One such gene was the OXT gene – which creates oxytocin – the “love” hormone. In the soybean-oil fed mice, levels of oxytocin in the hypothalamus went down.

So, not only could soybean oil promote a host of chronic diseases… it may impact your ability to connect and bond with people!

I think these problems arise with any oils that are subjected to heat. Cold-pressed oils seem to be more healthy.

only certain oils have the heat problem other do not.
the other problem is the high types on fats in those oils mentioned and too high in omega-6 fats.

canola oil is all full of chemical residues. it is the only way to extract the parts of the oil that are poisonous to humans. canola oil is rapeseed oil.

OK, learned something, good.

Its also my understanding that oils are being misbranded.  Olive oil isn't always Olive oil, etc.

If you know good olive oil there’s no mistaking it’s flavor, but it’s worth noting that IMO you do get what you pay for and if you find a brand you like stick with it.

We use Filippo Berio Olive Oil for grilling, frying and sautéing and their EVOO for salads and other recipes where you want more of that flavor.

Flippo Bario is/was our favorite olive oil until it became involved involved in the fake olive oil law suit. Apparently the Italian agro-mafia has/had its fingers in this pie. I'm not sure if there has been anything resolved regarding that suit. Several other companies were involved.

olive oil gets mixed/diluted with hazel nut oil. there is not a low cost easy test to know if it was or not. suppliers use to use other oils also, but test for others works 100% .and is cheap and easy.   when the bottle states the oil is from different countries good chance it is not 100% olive oil.   Product of italy is usually 100% olive oil.  imported from italy is usually mixed.
lately I've been using olive oil from California when I do use it. it is pure olive oil.

never cook with high heat with olive oil.
there is some research out recently stating having olive oil every day isn't healthy
https://www.pritikin.com/your-health/healthy-living/eating-right/1103-whats-wrong-with-olive-oil.html

another reason is olive oil is very high in Salicylates and everybody has sensitivity to salicylates.

Oh, great. After years of hearing the good things about olive oil, it now all changes. Maybe we should start drinking motor oil.

We also started using olive oil from Ca.

I never heard of this fake olive oil suit, but as I said I guess you get what you pay for. Been using it for years and years and enjoy the flavor and the way it “cooks”.

Boy do I feel silly.
