I've become more adventurous on culinary adventures as the years have gone by, but I'll still draw a hard line against day old expired clearanced for quick sale Wal-Mart sushi.... There are some lines one just should not cross...

Other than a few uber-high end places that just pay the fines, it's illegal for sashimi (The raw fish part of sushi) to be sold in the USA without deep freezing it first to kill any ickies.....

"Most would be even more surprised to learn that if the sushi has not been frozen, it is illegal to serve it in the United States.

Food and Drug Administration regulations stipulate that fish to be eaten raw -- whether as sushi, sashimi, seviche, or tartare -- must be frozen first, to kill parasites. ''I would desperately hope that all the sushi we eat is frozen,'' said George Hoskin, a director of the agency's Office of Seafood. Tuna, a deep-sea fish with exceptionally clean flesh, is the only exception to the rule."

This was Florida 2008. The oysters were sold in bulk, fresh from the water--not cleaned or shucked. It was $13 for 30# (about 8 dozen) in a burlap sack. Add a Bloody Mary and they made a fantastic breakfast.

Seek, that’s good to know because, although I do not care for sushi, I love seared Ahi. Ahi is another name for Tuna. If you trust the restaurant when they say it’s fresh, seared Ahi is basically raw tenderloin with seared edges but it’s delicious.
