I know she's not a Valk, but she's almost a Valk.

I ride a 2016 F6B Deluxe I bought new in 2018. In 2020 with 21,000 miles on the bike, I rode 300 fast interstate miles while pulling my Bushtec trailer in a pouring rain. This was at the end of a 3600 mile, 8 day ride. During these 300 miles of rain my engine light came on twice. Both times when it was on, my bike ran a little rough, my fuel gauge didn’t work correctly and putting the side stand down with the bike in neutral killed the engine. The light went off 50 miles before I got home and never came on again. The following week I started the bike in my drive and sprayed it with the garden hose from every conceivable angle into every conceivable nook and cranny and couldn’t duplicate the problem. Then I hooked the trailer up and did the same again including spraying the trailer, and I still couldn’t duplicate the problem.
Now, fast forward to yesterday (36,000 miles on it now) and when starting it to move it 50’,  it started a little hard and the engine light came on. I shut it off and restarted and it was fine and still is.
That’s 2 years and nearly 15,000 miles between instances. And the circumstances of these instances couldn’t have been much different.
Not sure if I have a problem worth worrying about, or just some strange, super occasional fluke?
What are your thoughts?

I had these same symptoms once.  The culprit was deteriorated, "old" ethanol gasoline, as the bike had been sitting a few weeks.  A switch to non-ethanol gas seems to have solved the problem.

If the check engine light comes on switch the bike off and then turn the ignition on and do not start the bike, after a few seconds the check engine light should flash. Count the flashes and then look for the trouble code listed. Mine turned out to be a crank position sensor. There are long flashes and short flashes each correspond to a number and a code along with a brief description of what is causing the trouble. I dont remember if the codes remain if the engine runs ok but its worth a try. Slow starting is something worth worrying about since the likely hood of getting stranded is small, its nice to to make sure.
