That’s a pretty cool plane. I’d like to see it perform without the strong headwind.

He probably could if he's got enough headwind and the yard has sufficient room (with no overhead wires or other obstructions).   While I'd love to have my own plane, not one that is so slow.   As the builder/pilot said, the trip to LA from Canada wasn't too far, the plane was too slow to fly that far.   Just my opinion but, fixed winged AC are for getting somewhere quickly.

Go on youtube and search for Chinook ultralight and there's lots of videos in all different circumstances.  I know the fellow in the above video has won many STOL competitions with his highly modified Chinook.

These aircraft are primarily designed for off-airport, back country operation.  They aren't really about speed, more about being able to land on creek banks, sandbars, etc.  A lot of times they'll go with a lower pitch prop to gain a little takeoff rpm even though it costs them a little cruise speed.  It doesn't do any good to get there fast if you can't land or takeoff once you're there.
