I'm going to install a Quadlock phone holder that has MagSafe power wiring (just 2 wires) that I need to tie into the bike.  That way the phone gets charged while on the bike.  What is the easiest location for a power source for me to cut into?

There's an accessory wire behind the side cover that is only hot
when the key is on, I wouldn't hook anything up other than there.
I guess you could get phone power directly from it, but it is
probably best used to trigger relays...

As ken said, there is an accessory wire you can grab power from. It may not be under your side cover though. I have an 2000 interstate and it was in front of the battery. Its two female connectors. If you're talking about the Quadlock wiring harness, you can go directly to your battery. It's designed to only energize when voltage input is above ~ 13.5V, off again when below ~ 12.5V.

I've just ordered one.

I think my battery is always above 12.5 volts. Wouldn’t that run your battery down to the 12.5 ?

When I installed self cancelling turn signals and a usb outlet, I cut into the 10 amp (120 watt) brake turn signal horn circuit in the head lamp can. It was a red 9 pin connector with 9 wires, power black, ground green. Pretty sure I rang them out before I cut them as the colors were pretty faded.  My added connected load was very low.

Anytime you consider modifying an existing circuit it's best to verify actual circuit performance first. I remove the 10 amp fuse and replace it with alligator clip test leads trough my 10 amp in line multimeter port. Then turn on the ignition and activate the brake and turn signals, give the horn a beep. See how much draw is on the unmodified circuit. Then hookup the new usb charger the same way to a convenient power source. I use my charging whip which is battery. Hook your phone up when it's low on charge. You may need to go to a lower amp port on the inline amp probe. I doubt your phone charger will draw much at all.

Anyway using the 5 amp accessory terminal as described by others will do you well and keep you from cutting wires and modifying circuits.

   Just an FYI.  I have had many bikes (and cages) come in with direct wiring to the battery.  One bike in particular Was just leaving the (Harley) shop when it started smoking.  We could smell the wiring. He stopped in a panic.  We cut the battery cable and kept the bike from burning up.  He installed a stereo and direct wired it to the battery with the fuse at the stereo.  Wire rubbed thru. crazy2 
  My point is to have a fused circuit at the battery , not up the line.
