I got an Interstate tank while I was in WA and never got a chance to get it paint matched and installed. Any trusted paint shops that can do an OE paint match? Black with red center stripe. Thanks in advance

I don't know about Houston paint shops, but here's a source that may help color match your paint.  All you need is your paint code(s)...

I have not needed to use ColorRite myself, but have heard good things about them.

I haven't used colorrite for anything Valkyrie or Honda, but the spray cans I bought to paint an aftermarket fairing for my old F800GS were a perfect match.

Not sure what part of Houston you're in, but:  When I needed to get my bags repainted, I took 'em to Alamo in Alvin.  https://www.alamocustomandcollision.com
