7.25 lb pork butt went on a half hour ago....Sat in the fridge for 24 hrs with a blanket of sweet & spicy mustard and orange ginger dry rub.... Looking at close to 8 hrs @250* for internal temp of 205*.....

It almost fell apart taking it off the smoker Tony... Neighbors came over with some freshly harvested fiddlehears...So we had pulled pork tacos with fiddleheads sauteed in butter and garlic, cocktails, and a fire in the fire pit....

It almost fell apart taking it off the smoker Tony... Neighbors came over with some freshly harvested fiddlehears...So we had pulled pork tacos with fiddleheads sauteed in butter and garlic, cocktails, and a fire in the fire pit....
Pork Butts are amazing when slow smoked. I will give it to ya, I had to Google fiddleheads. I have never had any of them. Are they sort of like Brussel sprouts? Hay  Jimmyt

Hay  Jimmyt Not really like brussel sprouts Jimmy..Fiddleheads grow in mud on the banks of streams ...It is an acquired taste, and adult beverages helps with that acquired taste..!!! I am not a huge fan of fiddleheads, but did eat some last night just to be polite...I had a gulp of adult beverage for every bite of fiddlehead...

In natural habitat ...................and ready to serve. Part of the fern family. Tried 'em. If you like mustard greens, then you probably will like fiddleheads. I, myself would not eat them again.

Glad you enjoyed it Terry! A few weeks ago I spotted some fiddle heads growing with other ferns in muddy soil close to the pond in our back yard. Sherry likes them. Me not so much. I showed her and asked if she want to cut some for dinner. She passed. I think she was a bit suspicious if they were the real thing that you would get at a farm store. But they looked like the picture Ron posted. I never heard of them before I met Sherry 50 years ago. Her grand parents on her father's side were from Mars Hill, ME. Sherry's father was born in Mars Hill. Her grand parents and father loved fiddled heads. So I just assumed they were Maine type of thing. The family moved south and ended up in Fitchburg, MA. That's where her father grew up. The rest is history.

They should be par boiled first to get rid of the toxins....Then saute in butter / olive oil with whatever seasonings you would like to add....
Tony, I would imagine they are abundant on most stream and pond banks in your area....
Ron has a good pic of them.....
I enjoy grilled / roasted brussel sprouts and asparagas, but fiddleheads not so much...
