When could I relistically expect to be able to cross the rockies on the Valk? Would like to go in late May but not sure if the passes are safe yet.

I'd suggest you select your probable route and go to that State's DOT website to find out the road conditions for the times you plan to travel.  Hopefully they'll be able to provide you with some history stats for that  pass.  You might be ok, or, maybe a little "early".

In late may you should be ok to travel across
the passes. Like if you are going via I-70,
it would be no problem.Colorado keep the roads
clear and clean. Usually it has finished snowing by then.  To make sure, just before you leave call Colorado DOT and find
out what the road are like.

I'd wait a month if the point of the trip is to take the high passes.  I think the right path could get you there if you just want to go to Seattle.

But, why ride the rockies if you don't take the high ground right?
