i've got popping and cracking...i want adj carbs to make a little richer. how do i do that?

You'll need to remove the carb fuel bowls and replace the slow jets with 38s to richen the mixture at idle to 3000 rpm. Above that rpm you can replace the metering needles with after market adjustables. I think there is and article in the "shop talk" section of this site that goes into shimming the stock needles.
Before you do that, check for vacume leaks ie. vacume hoses and plugs,
intake tube o-rings, tighten the clamps on the rubber connectors at the tops of the intake tubes. A good dose of Techron carb cleaner would be a good idea. Clogged slow jets are a common problem.
Are the exhuast pipes a new addition? If so snug up the manifold nuts, that can cause popping.

First things first........Ill bet you (unless you just did it) MANY o fthe intake clamps are loose and there are 18 of them (three groups of six) next, vacuum hoses and plugs.....dry rotted or cracked=bad.....last header bolts, carful not to break any.

Now see how shes running.  Oh and if you have a K&N filter, change to OEM that will rich it up a bit

Yep, I agree, check the easy stuff first.. check/replace the vacuum lines and caps, tighten clamps and snug the exhaust retainers and listen or look for leaks.. If you think its lean on the low end then you may have some varnish forming and might try a few tanks of Sea-Foam.. If the pilots have never been touched then you may well be running a bit lean, see where they are now set and if they are not at 2.25-2.5 turns out,, put them there[factory setting is generally about 1.75 turns].. If it continues to run lean then start messing with the needle height..

I feel you are wrongly assuming that one thing is directly related to the other and I want to caution you that you are contemplating embarking on a venture that is fraught with peril and disappointment.

The pipes are the reason for you concern. Put the stock back on and it will stop. You will not eliminate the reason for the complaint by simply adjusting out the problem with the carburetors.

also is the popping cracking at steady running, backing off throttle,or idle?

I agree with them that say find and fix the problem.
Also you can richen the mixture by just shimming the needles, easy.
