My local honda dealer doesn't know what weight of oil to sell me for the valk. Question is can you still use AFT automatic transmission fluid like we did in to old days or should I just take what the dealer sells me.

ATF is about 8wt oil. I run 15 wt fork oil in the compression fork leg and 10 wt in the rebound side. I am 300 lbs and ride heavily laden frequently. I also ride hard.

Honda manual says :
Pro Honda Suspension fluid SS8

I used W10, fork oil of the brand the dealer had on hand.

When I put 15 wt in after replacing my seals, I noticed the forks were considerably stiffer, especially in cold temperatures.  They also don't collapse like they used to when getting on the front brakes quickly.

I went out and measured the travel of the forks on my Interstate.

4" travel, top to bottom.

As far as I know, they come come initially with 10 wgt.. Lighter oil will lighten the front end and heavier oil will stiffen it.. ATF is generally 7.5 wgt..
