I have noticed when I open up the throttle to get the Valk up and moving, I start to smell gas.  On Easter sunday my brother was following me and when I opened it up, he told me he started smelling gas in his tahoe which was maybe 2 to 3 seconds behind me.  We were horsing around and I would get the Valk going from 60 mph to 85 mph real quick!  I only smell it on the bike when I just open it wide open, normal riding I never smell gas.  Is this normal?  Would this be a sign of a rich air/fuel mix?  Any thoughts or concerns you guys come up with would be appreciated!

The gas smell probably comes from the gas cap. At 60-85MPH you shouldn't be able to smell a mixture from the tail pipe.

There's a difference between gas and the acrid odor of rich exhaust. If this is a new smell, something wore out. How many miles on bike? Was it lais up lately (dried out diaphragms?). Too many variables without more info.
