no, you're not a wise guy, i didn't take it that way.
boiling the milk, actually getting it right up to the point were it boils, then putting in vinager, of course the right amount, is how you make ricotta cheese. i've got the recipe, i just can't get fresh raw milk so that i can try making it myself.

i use to be able to get "rennit" from the local cheese makers, but now, because they're afraid of law suits, they won't sell it to me..... (no, i wouldn't sue them, just some would....)
