I remember years ago Car and Driver magazine had a Pontiac Trans Am vs a Kawasaki KZ900 or 1000 on a racetrack.  The car won because it had higher cornering speed.  Although the bike could beat it in a straight line it didn't have enough straights to take advantage of that.
I think in the case of the two BMW's, because the bike is so much faster than the car it was able to win even if it couldn't corner as fast.
