I've got a 1998 Valk with 19K miles.  It has been awesome and never in the shop for anything but tires.  I have done oil change every 2500 miles.   I have not done any other fluid changes... brake fluid,  coolant, etc.    I did not have valve check done.    Nothing else done!

Should I just keep riding this great bike, or is there something that I really need to do?

I'd change the brake fluid, clutch fluid, coolant, and air filter.  Your valves are probably OK.  Refer to the service manual for recommended maintenance and service intervals.  If you don't have a hardcopy, you can download the service manual at Dag's site http://www.valkyrienorway.com/index.html.  It's the last link under Technical in the left column.

I'm sure all the other fluids need replaced.... it's overdue.  
The valve check and adjustment is due at 12k right?   
And hopefully you have had tires replaced and splines lubed with moly at each change l.
