Pages 15-7 and 15-8 in the manual shows the procedure. Do I understand correctly that you do not remove the caliper to replace the pads?

That is correct.  I use a large screwdriver to open the pads up as far as i can.  You take loose the screw cap, then remove the pin under the cap.  The pads will pretty much fall out.  Then install the new pads, insert the pin, and the cap.  Make sure you pump the brakes before taking it for a ride.

If the srew is stuck use an impact driver on it be careful not to strip the head.
