DO NOT grind your temp sensor. Many are fairly thin walled and you'll ruin it. If possible though, put your autometer sensor in the boiling water with it connected and powered up and see if it reads 212.

I think i might be an idiot, i was doing some reading from autometers website and was stating how " so you think your gauge is running higher than it should." stating that your gauge is reading 210 but in reality is is only 170, poor ground could be the culprit since i had tou use alot of tphlon tape cause it would leak some, so i went to town on it with the tape, also saw a small coolant around the thermo sensor for the overheat light so i put a good bit of tape on that as well, so needless to say, a poor ground will make the autometer sending unit read higher than what is accually going on, probably the same could be said about the thermo sensor for the overheat light, so when i get off tonight i am going to clean it up and get a better ground on it wish me luck
if this works, i am a big idiot and thanks for the responces, i will post the results
