I just got my '99 interstate a week ago.  Carbs seem to be fine, I use a gas treatment, and engine appears to have zero known issues.  What would you guys recommend as far a regular maintinance needing to be done at the 50k mark?  I had my shop inspect it and they found no issues mechanically, just not familiar with Valkyries (younger mechanics) and the owners manual only goes up to 24k.

Any ideas?

You'll feel better after you root around on here and get a feel for what "final drive maintenance"
incurs, then take the rear wheel and final drive off and look at all the important parts...

Turn your petcock off and go for a ride... if you don't run out of gas after a mile or two, you
probably have a bad petcock, might not sound so bad, but search the archives of this
site for "hydro lock" to be quickly convinced that you don't want to ignore a petcock problem.

1. Replace ALL fluids!
2. Check and lube splines and driveshaft.
3. Check exhaust header nuts for torque
4. Replace the valve stems at next tire change if original.
5. Go ride!

Just be observant these bikes are almost maintenance free. I posted a couple of weeks ago when asked about spark plugs. I changed my plugs with OEM plugs at 70K just to make me feel better the bike was running fine before the change.
The maintenance schedule goes to 24K but notice the mileage brackets increase every 4k. Just do a routine check every 4k.
Like hubcapsc said the petcock is an known issue. Change your air-filter at a regular interval.

At 50k there are many things to look at and most likely nothing that NEEDS to be done outside of what is mentioned above.

#1 and #2 are the drive splines and petcock.  #3 would be the brake and clutch fluids change.

Change out the coolant.  Change out the final drive oil.

If you take the rear wheel off to check the splines, check the damper rubbers.

I would check (and some others would not) the valve clearances.

Also, seeing as you work in a bike shop, carb sync would be easy.

I would also check the timing belts, but I doubt you'll find anything there.

That's a sweet bike and a great deal!  Enjoy it.

Only things I would add are starter button and starter relay maintenance. The starter button procedure and most of other things mentioned are written up here. http://www.valkyrieriders.com/shoptalk/.

You'll have to do a search for the starter relay pigtail and fuse cleanup. I keep a can of Radio Shack tuner/cleaner/lubricant and use the straw to lube my turn signal switch when it starts feeling a little stiff.
