I am thinking about buying an ultimate seat but confused on which one would be better for me
I am 5'10 with 31" inseam 240 pounds, with my weight would it be better to buy this one or step up to the big boy seat

I think inseam is more important than weight. Contact them and find out for sure. They're great people to deal with.

At 5'9" 180-5 (29.5" inseam), I followed the directions and got a lowboy, which I like fine. I later got a bigboy with my 2d valk, and I like it better. I do not have the sore-nuts syndrome many have complained of (married 25yrs and have no nuts), but the lowboy is raised more in the front than the bigboy. I also have no issue with getting my feet down with either seat, though the lowboy is supposedly 2" shorter than the bigboy. The taller bigboy means less bent knees at the center controls.
I think you'll like a bigboy better (just a guess)...... can't you hook up with folks that have them, though just sitting on the bike is not much of a test?
Remember, Ultimate has a 10day/2-week return policy, IF YOU ORDER NO FANCY STITCHING OR OTHER STUFF. Get the bigboy, and return if necessary (quickly).

Or come to Inzane and try one out. Des lets you 'try-before-u-buy'.

We're about the same size, and I bought the lowrider originally. It bent my knees too much - got achy after a while. Des let me trade in  for a Bigboy and I'm much more comfortable.

You will need to sit "in" the seat before you will know for sure. I'm 5'10", was 225-30, got the Lowboy (Lb) from Direct Line (8 yrs. ago). On the website, it said I would have to deal with them (Direct, not Ultimate) on any questions or returns.
On long rides, my back hurt and the boys were occasionally cramped. I called Ultimate and dealt with Dean, if I remember, told him my situation, and he said I would be more comfortable with the Big Boy (BB) and to get the backrest. Even though I bought thru Direct, he shipped the BB, and said to return the Lb in the box the BB came in. If I liked it, we would settle on backrest cost later. These guys are superb to deal with.
The BB was more comfortable. The boys were much happier, but the backrest made the big difference. However, at stops (red lights, stop signs, bikinis sunbathing...) I would be toeing the ground, not quite able to flatfoot the ground. Not a big problem, except when gravel, dirt, oil slicks were present. When your foot loses traction, the fat girl cannot be pogosticked to keep your balance.
Called Ultimate again and ordered the Lb, with backrest, which has made the backache a thing of the past. As I get closer to getting the Senior Citizen's discount, the flatfooting is more important to me than the occasional discomfort the boys encounter. (I'm enjoying the many pleasures of going thru a divorce, and, if I'm lucky, I might have at least one of the boys left after this delightful trip. So, the discomfort could be moot.)
I now use the Lb mostly, short trips running around town, any ride with a lot of stops. The BB goes on when I hit road.
If you cannot try one of these first, as stated previously, try the BB first. If flatfooting is an issue, return and get the Lb. I would suggest getting the backrest with either. Don't know if that is standard these days, back then, it was an option. It makes a world of difference.
Sorry for the length of this narrative, but it is raining, the dog only listens and wags her tail, and the cat sleeps all day.

2odd, did you ever put taller risers on the handlebars? This also is a sure fired way to end backache, along with a driver's backrest.

I have been checking them out and backrest is an option but will be a necessity for me, I bought a Utopia backrest for my OEM seat and it worked miracles for my back. On rides less than 100 miles the OEM is ok, but after a couple hours the wife and I both get iron butt. I am sure the Ultimate seat will take care of it.

Yeah, I did Jess. The backrest went on first, and secured the lower back. As the cash flow increased, I got the risers from Direct Line, seems like the ones Lamont designed or built. They looked good, and did give me a much better riding position.
Also added a kickshifter and repositioned the pegs. Been riding this lovely lady for years, and it still puts a big smile on my face. It just doesn't get any better than this.
