so here is my question.  I picked up some shark(yes THAT shark)steaks today. Never had it before and fer dang sure never cooked it before.  ? is-best way to prpare this and what sort of vegetables go good with it?? As always T I A. RIDE SAFE.

Olive oil, garlic and rosemary, salt and pepper to taste and pan sear it. It cooks QUICK! If you overcook it it will dry out. Never tried it on the pit. Gear Jammer, do you smoke it or grill it?

I put some chips in for the smoke, but as you said , it cooks pretty fast, so it gets just a little smoke flavor with the grill taste. And most of our meats are grilled with hot chili and garlic based rubs, usually Cajun style.

Shark, mmm good.
Use cooking methods normally associated with cooking a beef steak. Don't need to cook it near as long though. It'll cook quickly.
Lightly season if at all. In this instance, the "less is more" is a good rule of thumb. Just enough to bring out the flavor of the fish.
I remember ol' Cajun chef Justin Wilson making a pot of soup on his TV show. When he got to the part for the cayenne pepper he said "Careful puttin it in cause it's cursed Hell getting it out" Kinda applies to seasoning in general. Can always add more.
Side dishes -- Flavored rice (like Rice a Roni), Pasta w/Alfredo sauce, Steamed Asparagus, Broccoli, Roasted peppers and onions.

I only eat Shark once and some buddy else cooked it in the kitchen of a little joint just a few miles South of San Diego. That has been many moons ago.
Kind of one of those Greasy Spoons where ya get great food.

Cooked shark on the grill and in a casr iron skillet. I like the skillet better, more of a sear and flavor. I like the above seasoning, but I would add butter at a 50:50 with the olive oil. Oil to cook, butter to taste! Get that pan nice and hot and sear it on both sides for a minute or so, then finish in the oven for another 5-7 minutes at 350 degrees, right in the same pan. If you're not a rosemary fan, try dill. I just recently found dill in a paste. Comes in a plastic squeeze tube. Good on most fish.

The only thing I could add to the above is that if the steak has a strong ammonia smell (uric acid) or gamey flavor, you can soak the steak in milk to help remove the objectionable smell/flavor (might also be a good idea if serving to someone who does not like fish that tastes like fish). The problem is that unless you have a lot of steaks from the same source, you won't know about the flavor until AFTER cooking.

I guess the big question is,, what kind of shark ?? If its an ugly ole nurse shark , I wouldn't waste my time.. Whatever it is, if it smells like fish, feed it to the neighbors cat if you don't like your neighbor or if you don't like cats.. I like to soak [ I can't spell marinate] them for awhile in Italian dressing then toss them on the grill.. I usually cut up a bunch of veggies [ potato, asparagus, peppers, onions, etc] and roast them in a basket on the grill..

And i thank EVERBODY for the tips. Seaoned with a creole season and some garlic and seared and finished in a vegetable oil and butter mix. Seved up with a long whole grain brown rice a fresh garden salad and some really nice raw white mushrooms. My daughter who is a somewhat finicky eater said-it's a keeper meal.
