Lake Corpus Christi is just up the road. Some huge catfish have come out of the lake, as well.  When I was a young teenager, my bud and I came across a gar's skeleton and thought it was a gator till we saw the fins.

I've ridden my Valkyrie to the lake and camped, many times.  There, now it's Valkyrie related.  Wink

They are supposed to be good eating. The eggs are poisonous to humans though, unlike the eggs of any other fish species I know of.

Sausage. That's the best thing to do with a gar. My dad made sausage out of any critter we couldn't choke down any other way. He'd used a morton salt can to wrap freezer paper around, then stuff it with sausage and freeze it.
Back when I was stainless steel, bullet proof, and could eat anything I wanted, I'd slice off a piece of that frozen sausage and fry it with a couple of eggs. Then a glob a bunch of butter on a couple of pieces of toast and make a gar sausage and egg sandwich. By my reckoning, that's what they'll be serving for breakfast just inside the pearly gates. That and a cup of coffee strong enough to stand a spoon up in.

the biggest one I personally ever saw was like 1/3 or 1/4 that size. I thought that was close to the upper limit.
