Central Pennsylvania has a lot of great riding and some great places to visit. A few to consider:
Routes 219 or 119 are both really nice scenic roads up through central PA, both with nice sweepers and run through small towns and farmland.
Once you get north of I-80 there are some nice destinations to check out...
Just outside of Warren, PA is Kinzua Dam along the Allegheny River and near the Allegheny National Forest:
http://en.wikipedia.org/wiki/Kinzua_DamRight near there is the Kinzua bridge, an old, huge, railroad trestle. Most of it was blown over in a tornado years ago, but some of it is still there over the Kinzua Gorge. They just opened up a observation deck on the remaining part of the bridge this year:

http://pacanyon.com/Once you cross over into New York, is the Finger Lakes region. This is a nice area with tons of vineyards and wineries if you like that stuff. Also lots of scenics:
http://www.fingerlakes.org/Once you get in to Buffalo area... scenic? Not so much... run the freeways to the Falls. The American side is definitely not as nice as the Canadian side, but you can see the Falls non-the-less.
I might suggest if you have the time, I would run Route 3 along the east shore of Lake Ontario up to the Thousand Island region on the New York/Ontario border VERY scenic up through pine and ash forests to the St. Lawrence River. In this area they have vacation homes built on small islands in the river; hundreds of them...from small cabins to mansions. Really nice area with tons to do. Take one of the river cruises to really see the area. We were there a few times and really enjoyed it:
