 I am going to put a set of handlebar risers on my 97 standard. what would be
the best to put on the valkrie?

Ebay risers have worked very well for me with no changes in cables or lines.

Deuce risers do it for me too!

6" up and 2" back. Plus mine came with a custom 1/2" spacer to adapt the "protrusion" on the bottom of the risers.  So now it's 6-1/2" rise.

Can't say anything about the need for longer cables as my bike had longer "after market" cables from the previous owner.

    You can use stock cables with the Deuce risers but they have to be rerouted from in front of the trees to behind the trees. Longer cables would be better but I'm just cheap and they have been working that way for about ten years. I have to say though that risers have to fit the individual, what works for me may not be right for you.

I use LaMonts risers and 3" longer cables.. I didn't like rerouting the cables behind the forks.. The TBR triple clamp may change the dimensions a bit also..

These are the tallest most pullback you can get without changing anything, and without having to do other workarounds (like rerouting throttel cables, cutting off the bottom tab off deuce, and drilling out the triple tree riser holes a few thousandths or getting adapter bolts).

there has been one incident of risers breaking. this style, don't remember the brand though.
