Can I adjust my shocks back down by going 3 to 2 or do I have to go all the way up to 5 then back down  Thanks

You can go both ways, but my preference would be to go down to the 2.

If you are going to go from 3 to 2, it makes it easier if the bike is on a stand with the rear wheel off the floor which takes a lot of tension off the spring...JTL
