My 1998 Valkyrie is sluggish on the start, almost bogging for a few seconds and then takes off, the idle is set at 800-900RPM. once your on the road it runs fine just stopping and going? any ideas on whats wrong.

Sounds like dirty low speed jets, add a mega dose of techron or seafoam and go for 30 min low speed rides park the bike and let if sit for a few hours or over night between rides, but keep the techron/seafoam added to the fuel until it cleans up.

Has this just started after prolonged period of not riding?

I'm not sure what you mean about petcock, and it does not have a fuel filter. (but it is on my to do list) for this winter.

the idle is set at 800-900RPM

That is the barely minimum recommended, actually 800 rpm is too low.

You would have a more responsive motor with the idle set @ 1000 rpm.

If once the engine has been run a bit and the sluggishness goes away, and, if the engine runs smoothly and accelerates smoothly from just off idle to 2500rpms [low circuit] and beyond [high circuit], then it seems like it just may be slow to first deliver fuel upon start-up. That could be a petcock [fuel valve] or fuel filter issue. What kind of petcock do you have ? Vacuum or manual ? If vacuum, check the vacuum supply line/hose [ on #6 cyl] and if good then the petcock may need repair.
I would also recommend continuing using some Sea-foam for a couple tanks.
