 first thanks for all the info I have gotten from this forum ..
now  the question ... has anybody used or tried a mechanical oil pressure gauge with a stainless
flex hose .. just being an old style mechanic

Lots of folks use an oil temp dipstick. TelTru (or TruTel?) sells 2 units for a valk. One is 1 3/4" and the other is 2" diameter. I have the 2".

I have and mechanical oil pressure gauge on my I/S. I put a T in and have both gauge and light. Been a long time ago but I believe the gauge came with enough adapters to do the job.

I've had an AutoMeter C-2 model oil pressure gauge on my ride for 8-10 yrs(temp on the left, fuel in the center) now with no trouble. It's not a mechanical however, it uses an adapter at the point where the OEM pickup was. I found it easier to work with and mounted the gauge on the handlebar. That would be impossible with tubing, plus tubing leaves more room for vibration problems somewhere down the road. Here's an old picture of the front of the bike, I no longer have those particular leathers.
