How much do you loosen the four drive shaft bolts when you install the rear wheel?   Also will two thrust washers be better than just one, or is it just a waste of two bucks?

1 thrust. I guess just loosen them half way. Not sure as I take mine off and lube up the drive shaft.

Take the pumpkin off and grease the splines on both ends of the drive shaft while you are there.

Wiggling the pumpkin will suffice for the order of things.

You really should remove the pumpkin to check and lube the drive shaft and pinion cup with every rear wheel change.

 When you pull the final drive, a sudden jerk on the drive shaft will pull it out.
 Do this while apart to check the pinion cup and drive flange.   Better now than on the road trying to push it because it broke. The last one I did  , I was  reminded to check , and it was so far gone I had to put in a new one.

Yep. I am in the camp of taking the pumpkin off, removing the shaft from the pinion gear, inspecting and greasing the entire driveline all the way to the output shaft on the transmission.
