The TelTru is a good unit, but if you loosen it by twisting the face/sweep dial, you will alter the temp reading. (can be reset in boiling water 212*).  The housing that snugs over the dipstick hole threads is square, so use a wrench/small adjustable, not the gauge face.  I don't know if the oil line on the TelTru is accurate, I use an OE dip to check oil level (I don't know why, you drain/add a gallon and never need to check at all).

If you have an oil gauge, you really don't need a water gauge, though the water temp goes up before the oil.  In many years of riding, I have only gone a bit over 220* on my TelTru's a couple times (high temps and heavy traffic).  More of the cheapo radiator cap/temp gauges leak (on valks) than don't leak.

Lots of ways to go on accessory plugs.  First, figure out WHERE you want power, then choose a setup that gets you there.  I suck on auto electric.  Key switched and fused is a good idea.  Some of my stuff is always hot, and has drained the battery at lunch when I was looking at hooters instead of paying attention and turning stuff off.

I have just fitted a temp & amp gauge as well as a charger plug
for my phone in my right saddle bag & a cigarette lighter/USB port in the
left saddle bag.
That is so that my wife & I can keep our phones charged while on the bike.
I plumbed the temp gauge sender into the top rad hose & everything works
fine.
It is all pretty easy to do...just take you're time & put a 15amp fuse
in all you're add on's.
It is winter time here in Aus so not much else to do while it is raining
& cold.
I have also wired in a gps, trailer plug & I'm playing with a set of LED running
lights to go on the crash bars.
cheers...
