Valve or exhaust noise

Has anyone had an exhaust leak sound like a valve tap?and has anyone tried those new style header seals? I think they look to be made flat instead of the round copper ones.

Yep, first thing is to try and 'snug' them up. Go easy with them.
These exhaust leaks can be a real PITA to stop at times. I like the fiber gaskets.

When I replaced a valve, I used the 'new' style gaskets, and they sealed just fine.

Make sure any PO (previous owner) or service tech didn't leave old crushed gaskets in place and put new ones in on top... Found that on mine. Peeled all the old copper "crushed" gaskets out, replaced with a single new one in each port and fixed that.
Also know that a ticking noise can be the reed valves in the PAIR exhaust air induction system ticking in their cans. I think I am desmogging mine soon, they are getting noisy on mine. I even checked the valve lash to make sure it wasn't that. Verified the sound was coming from up under the carbs.
