Nice looking but not cheap. You'd have to mortgage the ranch to get the 3 gauge setup shown in the third picture.

Try Motosens.de. They have one that looks just as nice. Somewhat expensive, but not crazy like that one on ebay. they make good stuff, I have a couple of their gauges and I like them.

Also, remaining fuel would be little better than a guess, as the fuel height determines the pressure, but the tank shape controls the volume at a given height. The rate of drop would start out slow, then get faster as the tank empties. Unless you calibrated it by adding a small amount, making a mark, repeat, until the tank is full.
It would have to add a serious choke point to reduce the flow rate enough to be significant, though, as the flow rate is less than 8.5 ounces per minute at 120mph, assuming 30mpg.
