Has anyone run a 205/ 75/16 or even tried? I know it'll be tight....If it fits. Undecided

Have you run the numbers through a tire calculator?

See what a 225/65 diameter is, and then your 205/75.

I've had 2 different 205-65-16s on y I/S. I believe with stock length-13"-shocks that the 205-65-16 is right at the limit of what will fit without getting into some modifications to the existing structures. And for me anyway the 205-65-16s were very rideable. RIDE SAFE.

It'll probably fit if you remove your fender, and leave it off.

Tire Size Calculator
https://tiresize.com/calculator/

205/75-16
dia 28.1"
revs/mile 718

225/65-16
dia 27.5"
revs/mile 733

I didn't check to see if a tire was available.

As for width, 205 mm or 225 mm. It's 20 mm narrower, so nothing wrong there.
