How hard is it to remove the mufflers?  On the wrenching scale from 1 to 10 I'm a 2 or 3. uglystupid2

I only see one point of attachment.  Is there hidden stuff that will exceed my abilities or is it just unbolt and pull out?

You should be able to do it, you are correct about the attachment points but getting the muffler off the cat may be a bit of a struggle to not damage the chrome or the muffler.
