I was reading about rejetting the Valk, and in the Shoptalk section, under "Rejetting the Valkyrie", they make reference to the "Shrimplin Mod" to the exhaust... Wondering if anyone knows what this is, what it sounds like, and how to do it??

That's the same as cutting the piggies off. The 6 tubes coming off the rear baffle under the exhaust tips.
Cutting them off gives a slightly throatier sound.
If you do cut'em off it's best to leave a 1" stub so you can replace them with .75" copper plumbing pipe [don't worry, it'll turn black] if you want them quieter again.

Just got done doing this mod about 1 hr. ago.  Small change in sound but for the better.
