I'm reading a lot in various places about 1500 valksters that start out in second gear all the time. Does anyone here do this?

Not me for sure, I want my clutch to last longer and not lug the engine in the process. I've done it a few times by accident when I thought I was in 1st, but was unintentional. It's a foolish practice and eventually an expensive one regardless of what comments are posted by those that practice it. I had a chat with a guy at InZane a few years ago, claimed he had been doing it almost since the bike was new and had never experienced any trouble. I found out a few months later he had to replace his clutch at less than 80k, plates were toast. His money....his choice! Can't help but wonder if he still does it.

Like John, unintentional. I just don't get why, what benefit is there to start in 2nd?

Only by accident.
However, you can go from 1st to 3d to 5th all day with no issues at all. But it kind of spoils the fun.

No, not ever. Although I do shift early often, when just easing along.

Like others I have done it accidentally and then thought: that can't be good for my clutch.

The problem with doing it by accident is you are not giving it enough gas, and you are not thinking about slipping the clutch as much as you should. So you almost (or actually) stall. If you plan for a 2d gear takeoff, it can be done fairly well, but when done by accident you do it poorly, and invariably go from not enough gas, to too much gas (over-rev). And look and feel like a dummy. My next favorite (and more common) mistake it to get ready to leave with your buddies. Helmet/gloves on, feet down, bike centered up, start bike in neutral, grab clutch, hit first...... and stall cause the kickstand is still down. Somenabitch! Yep, I'm a dummy again. This usually happens when you are sitting around waiting for the guy (or two) who always takes longer to get his ass in gear to leave than everyone else. (You know who you are, knock it off )

One more to add to my list of poor riding habits *starting out in 2nd gear -shifting w/o the clutch -going to neutral as a general practice at red lights -using the front brake for stopping on a hill -not using the front brake at all EVER -using the front brake in SLOW riding conditions like in parking lots -revving the crap out of it at initial start up -slowing (braking) before every curve regardless of how slow you are already going Just a few of my pet peeves, now theres another one thank you very little LOL
