Just fired the young lady up, and after a few minutes, I noticed water/steam bubbling out from the top of the left valve cover. Should there even be coolant in there?

Sure there is a lot of coolant there. Two water pipes and the thermostat. You need to get up in there with a flashlight and try to track down where the leak is coming from.
My friend had water on top of the motor, it turned out to be a cracked thermostat housing, the top part that is plastic.

I see exactly where it's coming from. Between the seam of the valve cover and the engine. Bubbling thru the gasket, but I imagine there's more inside the cover, 'cause inside is supposed to be valves etc. ..... right????

Not saying I don't believe you but that would be very unusual and in my opinion if true means a cracked head. I'd take that valve cover off and do a detailed inspection. If there is water in there and you can't see where, I would even consider tarping off around the head and briefly run it without the valve cover. My expectation is the water is coming from on top of the block but appears to be coming out of the cover.

+1 on what Chrisj said: it is quite common that coolant leaks will originate on the hose that is on top of the engine. A photo: https://goo.gl/photos/qdHDTdobm31darF39The fix is just to re-torque the hose clamps.

No, there shouldn't be. What does your oil look like? Does the oil on the dipstick look clean and normal or pale and soapy looking? If normal, then the water/steam is originating from elsewhere. In my opinion anyway.

Joker, did you remove that valve cover yet? I'm am very curious to know if you found any evidence of coolant inside. Also the question Moonshot asked about the oil is a good one. Have you evaluated the oil for signs of water there?

My 1st thought was water in the spark plug well. Plugged drain hole through the head.
I would wonder why water would be coming from the gasket.
I would start by checking the oil for water.

The bike was out in a torrential down pour the other day. Good call. Gonna check that out. Fingers crossed.

Ok water in the sparkplug well is not that unusual. Blow the water out with air and then get a small wire and clear the drain hole for the sparkplug well. Check all of them. Easy

It's probably all evaporated by now Cannot do it tonight, but I'm going to blow out the wells and clean out the drain holes. Running the bike now and there is no more leakage. If I remember correctly, which I don't, a lot, it's easier to see the holes from under. A piece of baling wire pushed up worked the best for me.

If I remember correctly, which I don't, a lot, it's easier to see the holes from under. A piece of baling wire pushed up worked the best for me. +1 this was my second suggestion. Easier to find from underneath. Rusty plug, sounds like water in there. Just might be the problem.

Look in one that is clean inside and you can see the hole. Maybe easier to see with the spark plugs removed

The hole goes through the head, from the bottom of the spark plug hole.
I found it easier with an IS to find the hole from the underside of the head, and using a smaller than the hole wire, push up gently.
