97 Valk with 85,000 miles was running rough maybe misfire. Had the carburetors cleaned.
Now
Bike starts easy and no lack of performance but backfires between shifts and the engine gets uncomfortably hot after a while riding. No idiot light.
Does this sound like it’s time for carburetor rebuilding? If so, anyplace to send them out?

Does this sound like it’s time for carburetor rebuilding? If so, anyplace to send them out?
That sounds like it is really too lean. The work you had done really shouldn't have caused this, so something went wrong with the reassembly. Hard to say without a close examination. Maybe the intakes are leaking, or the vacuum lines have cracks. A little rough handling with old rubber parts can cause a lot of relatively unseen damage.

  Check for vacuum leaks. Did you put in new runner O-rings. Are all bolts and clamps properly tightened. Is the base line settings correct. If you did not de smog , it would be advisable. If you did a de smog , make sure it is sealed where it is needed.
 All else  , contact atticrat. He has done more carbs than you coule ever imagine.

+1 on possible vacuum leaks.

If the air box was off, the intake tubes often don't seat correctly on the backside of the carbs.
