I would like to switch out my bars for something that feels more comfortable. I'm 6' tall and while riding, hands on the bar and boots on the highway pegs, I feel like I'm doubled over. Any recommendations?

Try 4" risers.  No cable or line changes and they move the bars back somewhat.

I've heard handle bar riser will help, the answer for me was to go with Mick O Pegs for my knees.   I love them.

Stay away from the risers that have a small cross section at the bar clamp.  There are many available.  Mine were made for a H-D Sportser...

Aeromach 4" pullbacks for Honda are great.  Spendy and fancier than they need to be (especially buried under an interstate fairing), but about as much movement as you can get without changing anything.

You can probably get about the same thing, less fancy, from Scootworks (heavy duty).

Pad the tank well when you loosen the OE riser bolts or you'll have a real awh crap moment.

If you go much over 4 1/4", you may be able to get away with rerouting the throttle cables inside the triple tree and nothing else (and you may need to turn the handlebar wire clips around 180* even with 4").  Just be sure to test your running bike (for involuntary throttle gooses) turning the bars lock to lock before riding it.

Jess gave good advice on his post. I put Harley style Deuce Risers on my I/S. I believe they are 6 inch. I kept the original cables/hyd lines but did have to reroute some of them to inside the triple tree.
I also had to remove the lines from the handlebar clips and then re-tywrap them to themselves. It worked fine but the better solution would be to go with only 4 inch risers or buy longer lines/cables if you go with the 6 inch.

Wiggy, the Harley Deuce are 5.5", and require you to cut the bottom domes off, and come with SAE 1/2" bolts, not Metric, so you can get conversion bolts or drill a few thousandths of material out of the bolt holes in the tree.  Barely shaves any material and you can go back to metric without worry or problem later.

Or just remove the tank altogether.
