I recently bought a 2001 interstate and the former owner cut the piggies off, I don't if he drilled the baffles
but he rejetted the carbs.I don't like the sound and want to restore it to stock.Is this reversible or do I
have buy some stock pipes and rejet the carbs back to orginal.

First, you'll have to remove the tips and look in there to find out if just the piggies are cut or if the baffles have been drilled or removed.  If just the piggies have been cut, you can ask the previous owner if he still has them so you can get them welded back on.  If he doesn't, you can always ask on the board if anyone has a set they're willing to part with.

If you've heard a stock Valkyrie exhaust, and you think yours sounds very different from stock, especially louder, then I'd venture that there was more done to the exhaust than just having the piggies cut... The piggy cut mod makes a very minimal (In my humble opinion) difference to the sound...
