Seasoned with Honey Aleppo Pepper, Smokey Paprika Chipolte, and garlic powder for 24 hours in the fridge....
It's being smoked with apple and pecan wood....trying to keep temps below 250* is difficult because my smoker doesn't have any of that fancy 'set it and forget it' technology....it's all hands on controls.
Actual cooking time will all depend on amount of heat, so only time will tell....

I have nothing better to do than ride my tractor down back in the woods, drink a couple beers, and check on the heat every time I come back up ..... Lawn maintenance guy is coming mid afternoon to treat our lawn for the first time, so I need to keep everything under control until then.
