Ok, after I post this there will probably be a hit ordered by my Italian family for divulging family secrets. But I won’t give out my dough recipe. It took me years to perfect. The dough is done in a bread machine

I pre cook the dough so the delicate ingredients don’t have to roast too long

One secret is having a good brew to keep you calm while creating such an exciting dish

Pre cooked some HOT Italian sausage

Got some diced tomatoes all garliced up ready to go

Got the Fetta cheese and the Basil pesto ready to go

And of course home grown spinach

Thus tomato and pesto together at last

Finally out of the oven.

Don’t forget to drizzle some balsamic vinegar

And a nice Shiraz
