Wow! That cross-country trip with Vman & Orca was one of the highlights of this old guys life. And yes, I did try a Buffalo burger at Wall Drug in SD. Not for me. Buffalo meat is too lean, so it's lack of fat really affects the taste.

Bison burger definitely needs to be put through a meat grinder with some beef fat, similar to venison in that aspect.
