Which way do you turn the pinion/drive shaft oil seal? Turn the side with the expose wound spring on lip seal to the oil/grease inside or turn it out towards engine?

You mean on the rear 'propellor shaft' going into the pinion cup on the rear drive?   
That lip seal points backward into the cup, and rear end. 
It keeps the oil in the rear end, so the lip and spring face backward.
