As long as I am in there I have decided that it is past time to check and lube the universal joint.   I would like to know which wrench to use as I see several under the same part number  on the net.  PN 07908-4690003. I am wondering if there is any difference and which you have used as they go from about $17 to $50 for what appears to be the same part rom different companies.
Any help would be nice.

You can remove the u-joint without removing the swing arm.

a swing arm nut is on both sides.

The problem is the drive shaft and the chair are both on on side and the only way one does work on that side is upside down. Same problem when I was doing the desmog.  And I do suffer somewhat from vertigo. 
The bike is up on three cinderblocks right now so... The pipes are off and so off comes the swingarm.
I was just looking to find if there was a preference for the tool, what with the price difference and all and if it was the right tool as all used the same number but only one referenced the Valkyrie.

I agree with Joe333x you do NOT have to take the swing arm off to get to the universal joint.
Can you take the tire off? Should be able to because you indicated that you have the exhaust pipes off.
If you can take the rear tire off then you can remove (unbolt) the drive unit from the swing arm.
Once you remove the drive unit attachment bolts (4 ea) you can slide the drive unit out and the drive shaft and universal joint comes out along with it.
To properly remount the drive unit follow ChrisJ's write up on this site in the SHOPTALK section.
It's relatively easy, again assuming you can get the rear tire off.

To get an idea of what I am up against, literally (Rams take note here.)
Park your bike up next to your favorite car, and I mean NEXT to it. About two inches from you saddlebag and  your valve cover, on the center stand and then begin work without moving the bike or car. 
No one has every said I was sane but two of my bikes with sidecar are opposed cylinder bikes Valk and BMW) 2funny
 I do love a bike and chair though. smitten

I've never had a sidecar so forgive the ignorance but is it that hard to just unbolt it from the bike so that you can work on it?

In a single word, Yes.
Sidecars have to be aligned with the chair much as the  front end of a car.
The alignment is the rear wheel of the bike with the sidecar wheel.  Correct alignment is just as necessary on the set up as it is on your car. When you remove the chair and reinstall it measurements are critical.  All chairs set up a bit differently and they reinstall a bit differently, just saying.
I currently have three units I own in my garage and they all require realignment when reinstalled, The two BMWs are much easier to do but they are much simpler bikes and (especially the R27) run much slower than the Valk.
Even after this major service I will take the time to at least carefully check the alignment.  This bike ran quite well this summer and was very comfortable pulling a camping trailer at 70 - 80 MPH from Muscogee to SF in three days.
Bikes with sidecars on the right hand side pull to the right with acceleration and pull to the left with rear braking of closing the throttle so the set up must be dialed in or you may find yourself pulling  quite hard on the left bar just to go straight when going uphill or into a wind, and I will say the wind has never been blowing in a preferred direction when crossing Wyoming  no matter which direction I have been going.  tickedoff
