I make them rather thick so cooked up a bit more than a single serving. Meanwhile I had a couple eggs in the frying pan. While the grits are cooking I tossed in a good slice of butter & a pinch of salt. By the time the toast is done, so are the eggs and grits. Dump the grits on a plate with the eggs on top...a dollop of butter put in place under the eggs. Dress the toast as desired then enjoy.

While cooking I hear from the next room..."whatever you're cooking sure smells good."  Knowing my lady, I usually will make a little extra of whatever I'm cooking and this morning was no exception. She comes wandering out to the kitchen and I hear "mmm" over my shoulder...so I shared.(I can always use the points) The way I cook my eggs is something she really likes. I scramble them right in the pan, not a bowl first. Spray some Pam in the frying pan and get it quite hot first before tossing in the eggs which I scramble with a fork. When close to being done but still kinda runny, I run a bit of water in the pan lid and dump in the pan...then cover. The steam makes them high and fluffy, add to the spread of thick grits, do the toast, pour the coffee and enjoy.

Nancy asked where I learned to make such things so told her my mother passed from cancer when I was 10. Dad was school superintendent so I learned to fend for myself. Dad remarried to my 5th & 6th grade teacher...much to my dismay so I still was pretty much alone. Even though still a young kid, I learned to take care of myself which included cooking. Once beyond 4th grade, I found school rather boring which didn't help in the "personal conduct" section of the report card, it sorta carried on through jr. high and high school.

With egg on top she really liked it, but plain grits in a bowl...not so much. Neither do I for that matter, I like to have something with them.

John,

I'm glad to see you spreading the good news about grits to the underprivileged folks who never had the benefit of a 'southern exposure'. Lots of other ways to enjoy those delights, too, and I imagine you'll be sharing those with her, as well... You really do know how to charm a gal, my friend!

glad the misses enjoyed the GRITS.  Not much of a WI thing, glad u can enlighten us northern folks more.

We take a pan of grits and while boiling take 2 prefried eggs with yolk still runny and mix in with the grits then when done we mix in some cut up precooked pan pork sausage into the mix....salt and pepper and butter also.   A meal into itself....

Once on a ride to Roy's in Steinhatchee Fl. the owner brought us out a sample of fried grits.  He said if they have extra from breakfast they would fry the cold grits in small spoon sized portions if my rememberer is working properly.  Actually pretty good too.

Forgot to mention that Roy's had just been rebuilt from a previous hurricane when Helene came through and took everything but the concrete slab.  John I think we met you and Rita there for lunch once.
